That a football game was on television every weekend during the season in our house while I was growing up was a given. My Dad, who was a high school history teacher, moonlit as a football umpire, so he was very passionate (and knowledgeable) about the game.
Additionally, brother and I were both in our high school football band (me on the clarinet and flute and him on the trumpet).
So now, as an adult, having a football game on in the background all fall and winter just seems so nostalgic to me.
I do regret that half times don't feature marching bands any longer, but the most important aspect of football still lives on: the game day snacks!
One of my favorites is guacamole. Don't get me wrong, I love pigs in the blanket, pizza, chicken wings (sorry chickens!) and nachos, but guacamole is great because I feel like it's a no-guilt snack that you can really pig out on. Hello, vegetables!
My guacamole is so quick and easy to make, so it's the perfect game day snack. You definitely want to use very ripe avocados so the result is mostly creamy once you've mashed it with the other ingredients.
Easy Game Day Guacamole
Add the avocado, shallot, garlic, cilantro leaves, and lime juice to a bowl. Mash with a potato masher or fork until well combined. Season to taste with salt and pepper.
Garnish with reserved cilantro, if desired. Serve immediately with chips.
Leftover guacamole will start to turn brown, no matter what you do, so guacamole is best eaten the same day - and immediately, if possible.
